Soy
has been available for more than
two decades in health food stores
specially markets and restaurants
that serve heart healthy meals
.But now it is poised to become
the food of the next millennium
,available soon in nearly everything,everywhere.

Analyst):I see the soy protein
business tripling over the next
two years,because of this announcement.
Today ,the one billion-dollar
a year soybean business is dominated
by companies that produce soy
burgers,soy peanut butter,even
soy breakfast cereal.Kellogg company
has just test marketed a new soy
cereal,Smart Start.
WilliamMayer(Kellogg Company):We
know from consumers that they
love the taste and they really
like the fact that it brings then
proteinin the form of soy that
gives them the health benefit.
Ok,so soy is good for you.But
experience has shown that unless
healthy food tastes good ,it fails
in the market place.And many consumers
considers the taste of soy,in
this case tofu,bland or at best,bean
like.At Bolka Burger in Chicago,they
won't say how they'd made their
soy burgers taste like meat,but
they are convincing enough to
be featured in school cafeteriasand
fast food restaurants.
Kate Torres(Boca Burger Inc.):They
taste great and they're easy to
use and I think that consumers
will give them a shot.
And why not ?The FDA says 25
grams of soy a day ,that's about
two soy burgers, may lower your
cholesterol and reducethe risk
of heart disease.
